As you said you want to add some extra fields like selecting an option in subscription form.
I have added that field & attached the patch for the same. - 🇬🇧United Kingdom adamps
You can add fields here /admin/config/people/simplenews/settings/subscriber/fields. Then go to /admin/config/people/simplenews/settings/subscriber/form-display to make them display on the subscription form.
