If you set a recurring opening from now until end of time, Smart Date will only really generate out to the next six months or so based on a setting. Due to this, at the time the batch process runs creating all the Opening Instances, it can only generate matching openings to what the smart date says.
There is a current issue open on Smart Date to setup a way to generate out new recurring dates, with that done generating new opening instances should be as simple as re-running our batch process.
