Add default MailSystem config for Symfony Mailer Lite emails

Problem/Motivation

If your website doesn't have Symfony Mailer Lite configured for both the formatter and sender in MailSystem, it's possible that the test email form for Symfony Mailer Lite may give bad results.

Proposed resolution

We should add a module-level override in MailSystem so that all emails from Symfony Mailer Lite module use this module for both formatter and sender. This will only affect the test form email.
