Provide option for configuration persist on module uninstall

Problem/Motivation

When uninstalling the module, it may be desirable to have the current settings persist across all entity types instead of falling back to defaults that have not been configured.

Steps to reproduce

Uninstall the module

Proposed resolution

Provide an option when uninstalling the module to save the current logical configuration to the active configuration for all impacted fields.
