Same question here.
Which Version should we use (8.x-1.x or 2.0.0) for new projects or updating to Drupal 10?
What are the difference between the two versions? Removed deprecated code from Drupal 8 and 9 or new features? Both has support for Drupal 10.Thank you.

The 2.x version broke the module ief_popup, which allows to add/edit entities from inline_entity_form inside modal.
So we had to revert to 1.xhttps://www.drupal.org/project/ief_popup/issues/3382486 🐛 Inline Entity Form ^2.0@RC compatibility Closed: won't fix

The 2.x branch is now unsupported. There were major breaking bugs in it. Users of 2.x are recommended to upgrade to 3.x or downgrade to 1.x. Development is currently being carried out in the 3.x branch, although I don't think there are major differences between them at the moment. 3.x may drop support for Drupal 9, which would only mean that a site is stuck using the current RC until upgraded to D10.
