Fix existing module tests

Problem/Motivation

Some of the test coverage introduced in #3197423: Add test coverage for API sync → is failing on Drupal CI, because there is a dependency on Shopify API keys. There is no way to save the keys, so we should explore possibilities to mock the API response and assume it's working as expected.
