Allow each bundle to define their own defaults

Problem/Motivation

Add an override to the core plugin.manager.field.formatter that will check if the SFDS is enabled for the field and override the display to use the default for each bundle.

Remaining tasks

- [x] Add configuration setting to allow a site builder to enable/disable this option
- [x] Add tests to validate this works as expected.
