To be honest I doubt this module is out-of-the-box compatible with a multi-site installation. There are issues like this one: ✨ Make functional in multisite installations & domain_access Active and there is a domain_simple_sitemap contrib module that tries to fix it for simple_sitemap but it may be outdated. I don't use multi-site, but am happy to patch the module if someone can provide a clean patch.
No links being included in the sitemap sounds like a configuration problem. Make sure the links are accessible and configured for the correct variant. The screenshot you provided is not of link inclusion; it only shows what generators the sitemap consists of.
The 'default' in the domain can be fixed by giving the drush command the calling URL as context. Search the queue for more information.
