I have seen that both tags 2.0.0 and 2.1.0 are pointing to the same commit (578701b) https://git.drupalcode.org/project/views_sort_options_weight/-/tags
The 2.1.0 should support Drupal 10, but it doesn't, I think that the commit that should have been tagged for 2.1.0 is 84f8e7c4
Create a new tag pointing to the right commit 84f8e7c4 tom make the module compatible with Drupal 10
