Marked this as minor. To work around this issue I recreated a "junk" sub-view with the same machine name and then I was able to remove the VFV field in the parent view again.
After deleting an underlying "sub view" the Views Field View referencing that view can no longer be deleted in the parent view
Create a Views Field View and assign it to reference a "sub" view, then delete the underlying view. The field in the "parent" view cannot be removed or altered.
