Allow the view display in the OrderItemTable formatter to be configured

Follow up from 📌 Allow the view in the OrderItemTable formatter to be configured Fixed , which allows choosing the view, but not the view display.

There might be multiple order types, or multiple different view modes for a single order type each requiring slightly different settings.

Currently we have to create a different view for each. It would be better to use the same view for all of them, creating different view displays to override the parts that are different.
