@Nathan, thank you for pointing out the issue. Please note that this has been handled & fixed in version 3.0.3. It would be great if you could also test once and confirm the same.
I didn't realize I needed to set the base_url at /admin/config/people/oauth_login_oauth2/Settings
There should be an error message if this is not set, or a default value set to Drupal's initial base URL, e.g. \Drupal::request()->getSchemeAndHttpHost();.
