Is there a possibilty to use only debbitcards like maestro and Bancontact ?

Or jump in the checkout process to https://checkout.stripe.com/ to do the payment ?

Restricting card types is handled in your Stripe account's payment method settings. Stripe Checkout integration will need to be resolved via a new payment gateway plugin. There is already a ticket for this.
