After a lot of pulling my hair out I managed to resolve the issue.
For anyone who might be struggling I will try to explain my fix.
I thought it was something simple that I was missing and thankfully it was - Happy days!
I went into the structure / content types / manage fields / types and clicked on manage fields.
Found the field that I was expecting the Editor to show up on and clicked on Edit.
Then clicked on Full HTML and Filtered HTML and clicked save.
Went to configuration / Development / Performance and cleared all caches.
Finally the editor shows up again for me.
Hope this helps someone who may be struggling.

I believe this is the same issue I'm experiencing:
When only one format is selected for a field (and that format has a wysiwyg profile), the format select dropdown is not shown under a textarea. The wysiwyg module seems to expect it to always be there. - Status changed to Postponed: needs info

There is a bug in the better_format module that prevented the editor from loading if only one format is available. If you use that module make sure your version of the module has that fix first.
