Improve declaration of \Drupal\eca_cm\Plugin\ECA\Modeller\Core::create

Problem/Motivation

The declaration of \Drupal\eca_cm\Plugin\ECA\Modeller\Core::create currently uses EcaPluginBase as the return type. This is too broad and should at least be more specific as ModellerBase but even better would be Core. This way it remains compatible for PHP 8.1 even if the bade modeller becomes more specific - which is planned for ECA 1.2
