Reenable logging to watchdog

Problem/Motivation

Error logging in watchdog is disabled by checking on a non-existing function "watchdog". Can't think of a reason why this should be done, as logging is quite useful.

Proposed resolution

Reenable logging.

Possible extras

I would like to add more information about which entity/api call produced the error, but I will create a seperate issue for this.

Messages are also heavily used, as reported here https://www.drupal.org/project/mailchimp_ecommerce/issues/3033720 ✨ Allow to hide error messages on frontend Needs review .

Looks good. For context, Drupal Logger used to be named Watchdog in Drupal 7 and 8. Now I believe Logger is core and cannot be turned on and off.
