Example how how to setup according official orejime website

I tried to configure this module to get the same result as the official example on

https://orejime.empreintedigitale.fr/

But I don't seem to get it working like that. On the settings form it's only possible to add categories but as I understand correctly these are just to wrap the apps (cookie types, functional, marketing etc), they are not the actually checkboxes, cookies.
So how do you add these? There is no setting on the form to add these extra cookies like "functional", "marketing" etc. (via code, how?)

There are also 2 options (must consent, must notice). There first shows the consent popup directly (which is expected and good). The second doesn't seem to be doing anything out of the box (no documentation on how to configure/setup this). Do we make a template with specific markup/classes to trigger the following popup? Which classes do we give the elements etc?

I also tried figure out how to set it up manually by using the the de js code and invoke it/initialise it. (create a new orejime instance) Which works but I have no idea on how to modify it so can get the 2 popups as in https://orejime.empreintedigitale.fr/ and how to modify the buttons so I can choose which buttons to use on which popup.

Anyone managed to get it that way and would be so kind to share how to implement it?

This is how it basically has to be/become:
