Field mapping only accepts asterisk (*) wildcard as 2nd argument but no other position. For example:
1. contact_information/*/email_address works
2. contact_information/email_address/* doesn't work
Create an external entity type and configure a field mapping with wildcard in a position other than 2nd argument. For example: contact_information/email_address/*
Patch Drupal\external_entities\ExternalEntityStorage to support wildcard in any position for field mapping.
