Closing out as original bug is fixed. We can handle tests needed in an all-inclusive ticket that gets us to stable version.
"Only trigger builds for published content" option works great, but it currently does not trigger a build when the entity "published" flag changes from true to false. So if you unpublish a node, it will still present on the Gatsby site.
Change this :)

The change is currently missing an automated test that fails when run with the original code, and succeeds when the bug has been fixed.
