implement an admin page, where admins can set "lock" options on fields

Hi there,

I'd be a really nice feature to have a way for admins to be able to "lock" prepopulated fields as suggested in this old issue →

When I say "lock" I mean that user should be able to see the data of the field but not change it in anyway.

Would that be possible?
