I've created a patch with a bit different solution - by using the commerce_stock_enforcement_check() if the commerce_stock_enforcement module is enabled. The code of the module replaces the 'Add to cart button' with the disabled 'Our of stock' button. So maybe it makes sense to re-use the function in the commerce_wishlist module.
