Limit which data elements should be available in views fields, filter, and sort

Is it possible to define/limit which webform fields are available in views fields, filters, and sort sections? I have a lot of webforms with over 2000 fields amongst all the forms. I sometimes get timeouts and sometimes it's just hard to manage when I need to get an element for a specific form. Not sure if we can either limit fields if there is a filter set for which webform(s) is being used in the view...or if we can have an admin tab in webform settings to select which elements should be available in views from each webform.
