S3fs with advagg not serving gzip css and js

DISCLAIMER - I fully appreciate my issue may not actually be with s3fs!

I'm trying to move from a managed server into AWS. I recently moved:
/sites/default/files -> S3
database -> RDS
Site files -> EC2

...making the EC2 a lightweight (cheap) and disposable instance. I was expecting a performance improvement from offloading resources from the server to S3 too, but actually took a significant hit. This was down to S3 not handling/serving compressed files without user interaction.

That got me (frustrated)/wondering - there must be a way to configure advagg/s3fs/drupal to serve compressed content from the local machine, and everything else from S3?

I'm sure someone must have found a way to do this with AWS/S3 and Advagg, but I can't find anyone explaining how they did it.

Any help/guidance appreciated!

    Drupal 7 end-of-life triage:
    Drupal 7 will reach end of life on January 5th.

    The 7.x branches of S3FS do not have any additional planned releases.

    Latest Drupal 10/11 releases no longer store CSS/JS in the public:// streamWrapper and instead use a new assets:// wrapper.
