Currently there is no language variable stored in the commerce_stock_notifications table.
It would be great if we could just pop the current language into the notifications table, so when the time came to send the notification we could send something in the user's language.

Thank you for creating this issue. Unfortunatelly Drupal 7 will be EOL soon and no new features are expected in the 7.x version of the module. If I am not mistaken, the version for Drupal 8+ contains a language in the "Stock notification" entity. If not, please reopen or create a new issue for 8.x branch.
