Create an option for setting the apiVersion

Stripe works on a per-account versioning system; therefore, it is required that Stripe account owners commit to upgrades through the Dashboard. Stripe recommends utilizing the Stripe::setApiVersion() method for testing API updates before committing to the upgrade in the Dashboard.

Ideally we'd allow the user to choose between the "current" version set in their Dashboard, the "latest" API version tested with the module, and a "custom" option - which would be useful for testing the latest bleeding-edge version in advance of committing to it.
