Adjust gitattributes to allow for customization

We need to adjust .gitattributes:

  • Include package.json and .nvmrc
  • Remove /docs
  • Remove /components/*/*~main.twig, which is for Storybook support
  • Remove screenshot.png (actually fully delete this, it's a screenshot of Byte)
